Oliviero Toscani’s vineyards grow in an amphitheater-like area, characterized by a very special soil condition. It is in fact poor in clay while rich of a granite disintegration skeleton.
This characteristic, combined with a total south-west exposure, enables these vineyards to yield to a complex yet fresh wine.
The choice of Syrah as the major component is meant to obtain a spiced, deep texture when blended with the minerality of the Cabernet Franc and to achieve color stability when mixed with the Petit Verdot percentage.
The grapes are harvested, vinified and honed separately; it is only after a 16-month barrel period that they are blended after an attentive analysis of the evolution of each individual wine type.
The main characteristic of this wine is its exuberant yet fine freshness due to ripe red fruits (cherries and redcurrant), coupled with a very complex mix of sweet spices (cocoa, cinnamon, and licorice), and pepper tones.
Tannins play a very important role, but are never rustic.
Round but not overwhelming, they contribute to an intriguing, smooth sensation that, coupled with the great persistency of the wine, predicts a long aging plateau.
